Healthy Frito Pie

I know you’re saying, “What could be healthy about Fritos?” That’s why this “Frito Pie”, doesn’t include Fritos. There are only three things required to make this healthified version, and it is loaded with protein!


Madras Lentils

Organic Blue Corn Tortilla Chips – with or without flax or sesame seeds

Reduced fat mozzarella cheese stick


Place desired amount of madras lentils in the bottom of a bowl 

Crumble desired amount of chips and place over lentils

Add desired amount of mozzarella cheese

Word of caution:

There is a lot of sodium in all of the foods I just mentioned, so don’t overdue it on portion size, even though the calorie content is reasonable.
